Creamy Pasta / pink Sause Pasta Recipes at Home
Baked pasta with mackerel and vegetables. Wholemeal pasta au gratin recipe, ingredients and step-by-step preparation method.
Today it's raining, it's very cold and I thought that some baked pasta would be suitable for lunch. They are substantial, they are made very quickly, and if we combine them with a tomato sauce, vegetables and Lotka mackerel fillets, they will be appreciated by the whole family.
Whole meal pasta is my favorite, but if you don't like it, you can use whatever type of pasta you want, short or long. I made today's recipe with whole penne; I never miss them in the kitchen. The Lotka mackerel fillets, in olive oil, gave them an amazing taste, we enjoyed a delicious lunch!
Baked pasta with mackerel and vegetables - Ingredients (2-4 people)
- 150 g of pasta
- 1 can of Lotka mackerel fillets, in olive oil (115g)
- 2 tablespoons of olive oil
- 250 ml of tomato juice + 200 ml of the water in which the pasta is boiled.
- 1 medium onion
- 2 cloves of garlic
- 1 small bell pepper
- 2 tablespoons chopped parsley.
- salt to taste
- 100-125 g mozzarella/cheese
Pasta au gratin with mackerel and vegetables - Step by step preparation
- Fill a pot with water and put it to boil. When the water starts to boil, add 1 teaspoon of salt and the pasta. Boil them according to the instructions on the package.
- For whole pasta, penne type, the cooking time is 8 minutes.
- While the pasta is boiling, we take care of the sauce.
- Put a non-stick pan on medium heat, add 2 tablespoons of olive oil, 1 medium onion and 2 cloves of garlic, finely chopped, and bell pepper cut into small cubes.
- Sauté the vegetables for 4-5 minutes, on medium heat, add the tomato sauce, 200 ml of the water in which the pasta is boiled, the parsley and the Lotka mackerel fillet.
- Crush the mackerel fillet, mix the sauce well and boil it for about 10 minutes. We season it with salt to taste.
- Put the cooked and drained pasta over the sauce and mix. If the sauce is too thick, we can add a few spoons of the water in which the pasta was cooked.
- Mix well and turn off the fire.
- Grease a dish, which can be placed in the oven, with a little olive oil, add the pasta and level it.
- We add mozzarella, or grated cheese, on the entire surface of the pasta.
- We gratin them, in the oven preheated to 180°C, for 10 minutes.
We taste them warm; they are delicious! Good appetite!
